We studied the craft, learned the techniques, and probably ate a thousand soup dumplings trying to perfect our version. The result?     HOW TO COOK YOUR DUMPS

    Step 1
    Fill pan with 2-3 inches of water and bring to a boil.
    Step 2
    Line steamer basket with liners or cabbage leaves.
    Step 3
    Place dumplings in basket, don't overcrowd.
    Step 4
    Steam for 11 minutes.
    Step 5
    Let cool for 2 minutes before serving.

    Heat oil (enough to coat bottom of pan) in non-stick pan over medium heat.
    Step 2
    Place dumplings flat-side down and at least 1 inch apart. Cook 3-4 minutes until golden brown.
    Step 3
    Add ¼ cup water, cover immediately. Steam covered for about 3 minutes, KEEP MOVING THE PAN.
    Step 4
    Uncover - KEEP SWIRLING THE PAN. Pro tip: If it seems like all your oil is gone, it is. Add a little more so they don’t stick.
    Step 5
    Continue cooking on medium heat until flat-side is browned.
